Ingredients

  • 120 g spelt whole wheat flour
  • 0.5 Vanilla pod
  • 0.5 tsp Baking soda
  • a pinch of salt
  • 250 g low‑fat quark
  • 3 eggs
  • 100 ml milk (3.5% fat)
  • 4 tbsp coconut oil

Instructions

    Slice the vanilla pod lengthwise and scrape out the seeds. Mix the flour with the vanilla seeds, baking soda, and salt in a bowl. Whisk together the low‑fat quark, eggs, and milk until smooth. Fold the dry mixture into the wet mixture to form a thick batter.

    Heat 1 tbsp coconut oil in a skillet. Drop about 1 tbsp of batter per pancake so that 3–4 pancakes fit. Cook each side for 1–2 minutes until golden brown, then flip and finish cooking on the other side. Remove from the pan and repeat with all batter. Serve with liquid honey or maple syrup.
