Ingredients

  • 1 Garlic clove
  • Salt
  • 2 tsp Curry powder
  • 1 tbsp cayenne pepper
  • 5 tbsp oil
  • 600 g firm new potatoes
  • 3 sprigs Mint
  • 200 g Quark (20% fat)
  • 150 g full-fat yogurt
  • black pepper (ground)
  • paprika powder
  • 700 g beef tenderloin steak (4 steaks)
  • 4 mint sprigs (for garnish)

Instructions

    Preheat the oven to 200°C fan or conventional heat. Peel and press the garlic through a press. Mix with salt, curry, cayenne pepper and 3-4 tbsp oil in a large sealable container.

    Brush potatoes under running water, dry, halve them, add to the seasoning mixture, seal and shake well so the coating distributes evenly. Spread everything on the oven tray and bake for 50 minutes.

    Meanwhile rinse mint, finely slice leaves into strips, mix with quark and yogurt, season with salt, pepper and paprika powder. Pat steaks dry, season with salt and pepper, then sear in a hot pan with oil on each side until browned.

    Remove from pan, place on parchment-lined tray, return to oven for the last 10 minutes of potato cooking time to finish steak pink. Plate steaks with potatoes on warmed plates, garnish with mint leaves and serve with quark dip.
