Pan-Seared Salmon with Spinach

Ingredients

  • 2 salmon fillets (180 g each)
  • 400 g fresh spinach
  • 1 onion
  • 2 tbsp Rapeseed oil
  • 1 Garlic clove
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 50 g Heavy cream

Instructions

    Wash, trim, and discard the leaves of the spinach. Blanch in lightly salted boiling water until wilted, then drain, shock in cold water, pat dry, squeeze gently with hands, fluff again and chop briefly.

    Sauté finely chopped onion in 1 tbsp rapeseed oil until translucent; add spinach, press in garlic, sauté for a few minutes, season with salt, pepper, nutmeg, and pour in cream. Simmer a few more minutes while seasoning salmon fillets with salt and pepper. Heat remaining rapeseed oil and sear the salmon fillets on both sides briefly.

    Plate the pan-seared salmon over spinach and garnish with lemon slices as desired.
