Nut Quorn

Ingredients

  • 720 g Quorn (filets, 4 Quorn)
  • 2 tsp turmeric
  • 2 tbsp plant oil
  • 1 onion
  • 200 g nuts (e.g., walnuts, cashews, peanuts)
  • 2 tbsp Orange juice
  • 1 tbsp cornflour
  • 2 tbsp freshly chopped thyme
  • 1 tsp fennel seeds
  • Salt
  • pepper (ground)
  • pickled cranberries (optional)

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Score the filets on the side. Mix 1 tsp turmeric with 1 tbsp oil and brush the Quorn filets all over.

    For the filling, peel and finely dice the onion. Chop the nuts finely and mix with the onion, orange juice, remaining turmeric, remaining oil, cornflour, thyme and fennel seeds. Season with salt and pepper and fill the pockets. Place the Quorn pockets in a baking dish, spread the remaining mixture around them and pour a little water over.

    Bake in the oven for about 20 minutes. Slice and serve with the filling, accompanied by cranberries and green asparagus if desired.
