Ingredients

  • 800 g pork fillet (pre‑cooked)
  • 2 tbsp peanut oil
  • Salt
  • black pepper (freshly ground)
  • 5 tbsp light sesame seeds
  • 2 tbsp freshly chopped Thai basil
  • 1 tbsp freshly chopped mint
  • 4 tbsp sweet‑and‑sour chili sauce (Asian store)
  • 3 tbsp Lime juice
  • 2 tbsp dark soy sauce
  • a pinch sugar
  • Thai basil for garnish

Instructions

    Preheat the oven to 160°C with upper and lower heat.

    Wash the pork fillet, pat dry, and remove fat and sinews.

  3. 3.

    Brush the meat with 1 tbsp peanut oil and season with salt and pepper.

    Sear the meat all around in an oven‑proof pan. Remove from the pan and brush with remaining peanut oil. Place sesame seeds on a flat plate and coat the meat in them. Finish cooking in the preheated oven for about 30 minutes.

    For the Asian dip, wash and dry Thai basil and mint. Shake off excess water, pick leaves, and finely chop. Mix herbs with chili sauce, lime juice, and soy sauce; season with salt, pepper, and sugar to taste.

    Slice the pork fillet with its sesame crust into portions, arrange on a plate, and serve with the Asian dip and Thai basil garnish.
