Tofu in Sesame Coating

Ingredients
- 250 g Tofu
- 5 tbsp Soy sauce
- Tabasco
- 1 tbsp lemongrass (bright, finely chopped)
- 1 tbsp fresh coriander (finely chopped)
- 1 tbsp Sesame oil
- 1 tbsp lime juice
- Salt
- Pepper
- flour (for coating)
- 2 Eggs
- 75 g sesame seeds
- oil (for deep frying)
Instructions

Cut tofu into bite‑sized cubes (about 2 × 2 cm).

Whisk together soy sauce, Tabasco, lemongrass, coriander, 1 tbsp sesame oil, lime juice, salt and pepper; marinate tofu for 2–3 hours, then remove and drain.

Preheat the deep fryer to 180 °C or heat oil in a pot (it’s ready when bubbles form on the handle of a wooden spoon).

Sift flour onto a plate, whisk eggs with 1 tsp water, and place sesame seeds on another plate. Coat tofu cubes in flour, dip in egg mixture, then dredge in sesame seeds.

Fry immediately in hot oil until golden brown.

Serve drizzled with a touch of soy sauce.
