Pan-Seared Hake Fillets

Ingredients
- 4 hake fillets (about 250 g each, skin on)
- 1 lemon
- 4 tbsp fresh parsley
- Sea salt
- freshly ground pepper
- 3 tbsp butter
- 1 tbsp Olive Oil

Wash and pat the hake fillets dry. Cut the lemon in half lengthwise; squeeze one half over the fish to drizzle, cut the other half into wedges. Let the fillets marinate for 5 minutes.

Meanwhile wash and shake off excess water from the parsley, then finely chop it. Pat the fillets dry again and season with salt and pepper. Heat butter and olive oil in a non-stick pan; sear the fillets skin-side down for 3–4 minutes. Flip, remove the pan from heat, and finish cooking the fillets in residual heat for 2 minutes. Serve garnished with chopped parsley and lemon wedges.
