Ingredients

  • 125 g fresh young spinach
  • 1 Garlic clove
  • 40 g freshly grated Parmesan cheese
  • 2 tsp capers
  • 50 g chopped hazelnuts
  • 100 ml olive oil
  • Salt
  • black pepper (freshly ground)
  • 4 tilapia fillets (about 180 g each)
  • 1 tbsp Lemon Juice
  • Salt

  • 1 tbsp flour
  • 3 tbsp olive oil
  • chili flakes

Instructions

    Wash, dry and trim the spinach. Peel and roughly chop the garlic clove. Drain the capers. In a blender combine spinach, garlic, parmesan, capers, hazelnuts and a splash of olive oil; blend until smooth, adding more oil to reach desired consistency. Season with salt and pepper and divide into small bowls.

    Wash and pat dry the fish fillets; drizzle with lemon juice. Season with salt and pepper and lightly dust with flour. Heat oil in a pan and brown each side of the fillets for about 2 minutes. Arrange on plates or a platter, sprinkle chili flakes, and serve with the spinach sauce, garnished with baby spinach and lemon slices.
