Ingredients
- 1 kg potatoes (mostly waxy or firm‑cooking)
- 30 g fat (butter shortening, margarine or oil)
- Salt
- black pepper (freshly ground)
Instructions

Cook the potatoes in their skins the day before, peel them immediately and let them cool overnight.

Heat the fat in a large pan, add the potatoes, reduce heat and turn only when the bottom layer is lightly browned (about 8 minutes).

Keep the temperature from getting too high to avoid burning the potatoes.
