Pan-Fried Potatoes with Ground Meat and Feta

Ingredients

  • 700 g boiled potatoes (cooked the day before)
  • 350 g spinach (fresh or frozen)
  • Salt
  • 1 onion
  • 2 tbsp olive oil
  • 500 g mixed ground meat
  • 1 tbsp Tomato Paste
  • black pepper (ground)
  • 0.5 tsp ground cumin
  • 200 g sheep cheese
  • 2 tbsp clarified butter
  • 1 tsp flour
  • 200 g Sour Cream
  • 1 tsp lemon juice
  • 1 tbsp finely chopped fresh mint

Instructions

    Wash, rinse and blanch the spinach in boiling salted water, then drain, shock with cold water, let it dry, squeeze out excess liquid by hand and roughly chop. (Or thaw, squeeze and chop if frozen). Peel the onion and dice finely.

    Heat the oil in a wide pan, sauté the onion until translucent. Add the ground meat and cook until crumbly. Stir in tomato paste and season with salt, pepper, and cumin. Whisk flour into sour cream until smooth and stir into the meat mixture, heating again. Remove the meat from the pan and set aside.

    Crumble the sheep cheese, peel the potatoes and slice them thinly.

    Sauté the potato slices in hot clarified butter in a wide non-stick pan, then mix in spinach, ground meat, and sheep cheese. Bring everything to a quick boil, season with salt, pepper, and lemon juice, and serve sprinkled with mint.
