Ingredients
- 500 g small eggplants
- 250 g chickpea flour
- 1 tsp cumin
- 0.25 tsp chili powder
- 0.25 tsp coriander powder
- 1 tsp paprika (hot)
- 1 tsp garam masala
- Salt
- 1 l oil (for frying)
Instructions

Wash the eggplants and cut them into ½ cm thick slices.

Whisk the flour with all spices and 300 ml cold water until a thick batter forms. Transfer to a shallow dish.

Heat oil in a pot, dip each eggplant slice in the batter, and fry portions in hot fat for 4 minutes on each side. Remove and drain on kitchen paper.
