Paella with Mussels

Ingredients
- 1 onion
- 3 Garlic cloves
- 12 mussels
- 300 g Spanish short-grain rice
- 1 l meat broth (from the jar)
- 1 bay leaf
- 1 tsp paprika powder
- 4 tbsp olive oil
- 1 can saffron
- 2 small bell peppers (red and green)
- Salt
- Pepper
- 2 sprigs oregano

Peel and finely chop onion and garlic. Rinse mussels under running water, remove beard. Heat olive oil in a paella pan, add mussels, sauté until they open, then set aside warm. In the remaining fat, sauté onion and garlic, add saffron and paprika, bay leaf, salt, pepper, stir in rice and pour in boiling broth.

Simmer for 25 minutes. Wash, trim, halve, seed, remove white membranes from bell peppers and cut into strips. Add peppers 5 minutes before end of cooking time. To serve, distribute mussels over finished rice, garnish with oregano.
