Paniertes Fischfilet

Ingredients
- 400 g cod fillet (cut into wide strips)
- 1 tsp medium-hot mustard
- Salt
- Pepper
- 50 g cornflakes
- 2 tbsp breadcrumbs
- 3 tbsp Flour
- 2 Eggs
- 1 Shallot
- 1 tsp butter
- 300 g frozen peas (thawed)
- oil (for frying)
- lemon wedges (for garnish)

Cut the cod into about 3 cm wide strips and lightly coat with mustard. Season with salt and pepper. Crush or grind the cornflakes and mix them with the breadcrumbs in a bowl. Place the flour on a plate. Beat the eggs well in a shallow dish. First dredge the fish sticks in flour, then in egg, and finally coat them with the cornflake mixture.

Peel and finely dice the shallot; sauté it in butter in a pot. Add the thawed peas, cover, and steam over low heat for about 5 minutes. Season with salt and pepper.

Meanwhile, heat oil in a non-stick pan and fry the fish sticks until golden yellow on both sides, about 4 minutes each side. Garnish with lemon wedges.
