Halibut with Potato Mash

Ingredients
- 10 saffron strands
- 10 tbsp orange juice
- 8 tomatoes
- 3 Garlic cloves
- 0.5 bunch Basil
- 50 olives, 25 black and 25 green, pitted
- 50 g capers (jar)
- 2 tbsp grated orange zest
- 3 tbsp olive oil
- 4 tbsp sherry
- Salt
- Pepper
- 4 fillets halibut 150-200g each
- 800 g potatoes
- 0.5 bunch thyme

Peel the potatoes and boil them in salted water until tender.

Halve the tomatoes, remove seeds, and dice. Peel and finely chop the garlic. Wash the basil, shake dry, and roughly chop. Slice the olives into rounds. Dissolve the saffron in 4 tbsp warm orange juice. Add olives, capers, tomatoes, basil, garlic, 1 tbsp orange zest, sherry, and 1 tbsp oil; mix well.

Preheat the oven to 200°C. Season the fish with salt and pepper, drizzle with a little orange juice, and place in a greased baking dish. Spread the tomato mixture over the fillets, seasoning with salt and pepper. Cover the dish with foil and bake for about 30 minutes.

Ten minutes before serving, mash the potatoes with a press, mix in oil, remaining orange juice, and orange zest; season with salt, pepper, and thyme. Arrange the fish on warmed plates, spoon potato mash into bowls, top with the fillets, garnish with thyme, and serve hot.
