Ingredients

  • 1 kg oxtail
  • 2 tbsp plant oil
  • 800 ml milk
  • 4 onions
  • 30 g Butter
  • 3 tbsp Flour
  • Salt
  • black pepper (freshly ground)
  • nutmeg
  • 30 g clarified butter
  • 2 tbsp chopped parsley

Instructions

    Rinse the oxtail thoroughly, pat dry and cut into 3 cm pieces. Heat the oil in a pot and brown the oxtail for 3-5 minutes. Pour in the milk, cover tightly and simmer gently for about 45 minutes until tender. Meanwhile peel the onions and slice them into rings. Drain the cooked oxtail and reserve the cooking liquid.

    In another pot melt the butter, sprinkle with flour, sauté briefly, then add the reserved milk. Whisk to a smooth sauce and let it simmer on medium heat for 5 minutes. Season with salt, pepper and nutmeg. In a skillet heat the clarified butter and toast the onion rings until golden brown. Return the oxtail to the sauce, plate it, top with the roasted onions and sprinkle with parsley before serving.
