Grilled Liver & Bacon Skewers

Ingredients
- 500 g fresh poultry livers
- 2 onions
- 1 large apple (e.g., Granny Smith)
- 100 g raw smoked bacon, heavily streaked (8 slices)
- 4 Sage leaves
- 2 tbsp plant oil
- 1 tbsp chopped parsley
- 4 tomatoes
- 4 onions
- Salt
- black pepper
Instructions

Wash the poultry livers, pat dry with paper towels and remove all skins and sinews. Cut into about 2 cm pieces. Peel and quarter the onions. Wash the apple, quarter it and remove the core. Slice the apple quarters crosswise into about ½ cm thick slices. Skewer the prepared ingredients alternately on four skewers, starting and ending with bacon. Brush the skewers with oil and grill over high heat for about 15 minutes, turning frequently.

Halve the tomatoes crosswise and peel the onions, then cut them lengthwise in half. Place the tomato and onion halves on the grill briefly to char, seasoning with salt and pepper as you go.

Season the finished skewers, sprinkle with chopped parsley and serve alongside the grilled tomato and onion halves.
