Ingredients
- 400 g fresh salmon fillet (skinless)
- 2 tbsp lemon juice
- 2 tbsp butter
- Salt
- 400 g spaghetti
- 3 shallots
- 2 tbsp butter
- 200 g heavy cream
- 200 ml fish stock
- black pepper (ground)
- nutmeg
- 2 tbsp chopped basil

Cut the salmon fillet into bite-sized pieces and mix with the lemon juice. Peel and finely dice the shallots. In a pot, heat butter and sauté the shallots until translucent. Deglaze with fish stock, add cream, season with salt, pepper, and nutmeg, and reduce by half over high heat for about 10 minutes.

Season the salmon with salt and pepper and brown it in hot butter in a skillet for about 3–4 minutes.

Meanwhile, cook the spaghetti in plenty of boiling salted water until al dente. Drain the pasta and toss it with the sauce. Plate the salmon‑spaghetti and garnish with basil before serving.
