Veal Liver with Onions and Apples

Ingredients

  • 500 g veal liver (sliced)
  • 2 tart apples
  • 4 onions
  • 1 tbsp Lemon Juice
  • 2 tbsp flour
  • salt (pepper)
  • 4 tbsp butter
  • 750 g starchy potatoes
  • 0.25 l meat broth
  • 1 tbsp butter
  • salt (pepper)

Instructions

    For the mash, peel, wash and cut the potatoes into pieces; boil in salted water for 20 minutes. Drain, roughly mash, mix with hot meat broth and butter, season with salt and pepper.

    Wash the liver, pat dry and remove all membranes. Peel the apples and core them out. Peel the onions and slice them; cut the apples into about 8 mm thick rings, drizzle with lemon juice. Preheat the oven to 75°C (167°F).

    Mix flour with salt and pepper, coat the liver slices in it. Heat 2 tbsp butter in a pan, brown each side of the liver for 3 minutes, remove and keep warm in the oven. Add the remaining butter to the pan, bake the apple slices on both sides until golden yellow, place them over the liver slices. Sauté the onion slices in the leftover butter, then lay them over the apples.
