Ingredients

  • 4 large beef tomatoes
  • 1 fresh head of garlic
  • 1 slice of white bread (e.g., toast, crumbled)
  • 4 tbsp pine nuts
  • 3 sprigs rosemary
  • Sea salt
  • freshly ground pepper
  • 6 tbsp Olive oil

Instructions

    Preheat the oven to 220°C. Cut the tomatoes and the whole head of garlic in half crosswise. Rub the cut surfaces of the tomatoes with the cut side of the garlic to lightly flavor them.

    Arrange the tomato halves and garlic halves cut-side up on a baking sheet lined with parchment paper. Sprinkle the crumbled bread slice and pine nuts over the tomato halves. Finely chop 1 tbsp of rosemary leaves and scatter them over the tomatoes. Scatter the remaining rosemary sprigs around the tomatoes. Season the tomato halves with salt and pepper, drizzle with olive oil, bake in the center of the oven for about 10 minutes, and serve hot.
