Ingredients

  • 500 g parsnips
  • 500 g carrots
  • 2 tbsp plant oil
  • Salt
  • 3 tbsp butter
  • 3 tbsp honey
  • 2 tbsp lemon juice
  • coarse Sea salt

Instructions

    Preheat the oven to 200°C with fan and top heating.

    Peel the parsnips and carrots, cut them lengthwise into quarters. Spread on a baking tray and mix with the oil. Season with salt and bake in the oven for about 20 minutes until almost cooked, turning halfway through.

    Warm the butter, honey and lemon juice together in a small saucepan to make a glaze, then brush it over the vegetables. Bake at 240°C with top heating or grill function until golden brown. Arrange on a preheated plate and sprinkle with coarse sea salt before serving.
