Oven Roasted Sweet Potatoes with Chicken Drumettes

The oven roasted sweet potatoes with chicken drumettes from Spoonsparrow are true soul food.
Ingredients
- 3 tbsp olive oil
- Salt
- Pepper
- 800 g chicken drumettes (8 chicken lower legs)
- 1 kg sweet potatoes
- 1 Organic Orange
- 2 cloves garlic
- 5 g Mediterranean herbs (0.25 bunch; rosemary, thyme, oregano)
Instructions

Mix 2 tbsp oil with a pinch of salt and pepper. Rinse the chicken drumettes, pat dry, and rub all over with the seasoning.

Peel, wash, and roughly cube the sweet potatoes. Toss them in a bowl with the remaining oil, 1/2 tsp salt, and pepper.

Peel the orange hot, grate it dry, finely zest the peel, and add to the potato cubes. Halve the orange and squeeze out the juice. Gently press the garlic into its skin. Wash and pat dry the herbs.
