Oven-roasted eggplants from Spoonsparrow are a great side dish for grilling or as a Mediterranean appetizer.
Ingredients
- 4 small eggplants
- 4 tbsp olive oil
- 1.5 tsp sea salt
- Pepper (freshly ground)

Clean, wash, and halve the eggplants; brush the cut surfaces with oil. Lightly season with salt and pepper. Spread remaining oil on a baking sheet and arrange the eggplant halves cut-side down.

Bake in a preheated oven at 200 °C (180 °C fan‑forced or gas level 3) for about 20 minutes, then serve hot.
