Ingredients

  • 2 kg new potatoes
  • 250 g quark
  • 50 g sour cream
  • salt (pepper)
  • 300 g tomatoes
  • 2 tbsp chives
  • Cayenne pepper
  • 2 hard‑boiled eggs
  • 2 tbsp chopped parsley
  • freshly grated horseradish
  • 1 chopped onion
  • 4 medium pickles
  • 1 tsp medium‑spicy mustard
  • 1 tsp mustard powder (coarsely ground)

Instructions

    Preheat the oven to 200°C. Wash and dry the potatoes, then pierce them several times with a fork. Wrap firmly in aluminum foil. Bake for 1 hour.

    250 g quark with 50 g crème fraîche whisk together until smooth and season heavily with salt and pepper.
