- 2 kg new potatoes
- 250 g quark
- 50 g sour cream
- salt (pepper)
- 300 g tomatoes
- 2 tbsp chives
- Cayenne pepper
- 2 hard‑boiled eggs
- 2 tbsp chopped parsley
- freshly grated horseradish
- 1 chopped onion
- 4 medium pickles
- 1 tsp medium‑spicy mustard
- 1 tsp mustard powder (coarsely ground)

Preheat the oven to 200°C. Wash and dry the potatoes, then pierce them several times with a fork. Wrap firmly in aluminum foil. Bake for 1 hour.
