Baked Olives in Dough

Ingredients
- 100 g flour
- Salt
- pepper (ground)
- 2 Eggs
- 250 ml white wine
- 8 artichokes (optional)
- lemons
- 150 g olives (large, green, pitted)
- 6 anchovy fillets
- 800 ml olive oil (for frying)
- lemon slices
Instructions

Mix flour with 1 tsp salt and pepper. Whisk in eggs and wine.

Wash the artichokes, remove outer leaves generously, cut off tip and stem. Halve lengthwise and drizzle with lemon juice. Pat olives dry. Chop anchovies into pieces and mix into olives.

Heat oil for frying until small bubbles rise on a wooden spoon stick.

Thread artichokes and olives through dough in portions and fry in hot oil for 3-4 minutes until golden brown. Drain on paper towels. Serve baked olives in dough with lemon wedges.
