- 8 slices salmon
- 8 tsp crème fraîche
- pepper (ground)
- Chives

Wash potatoes thoroughly, wrap each in a piece of foil, poke several times with a wooden stick, and bake in a hot oven at 180°C for about 40 minutes.

Remove from oven, unwrap, cut crosswise on top, gently press apart. Top with salmon slices, add a spoonful of crème fraîche to each, sprinkle with coarse pepper, and garnish with chives.
