Oven‑baked potato with herb cream is a perfect post‑work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 4 medium russet potatoes
  • 4 tbsp plant oil
  • 200 g crème fraîche
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp Lemon Juice
  • 2 Garlic cloves
  • 2 tbsp mixed chopped herbs (parsley, chives …)
  • 0.5 tsp crushed red pepper

Instructions

    Wash the potatoes well and pat dry. Brush each with 1 tbsp oil and wrap tightly in aluminum foil.

    Bake in a preheated oven at 200 °C for 30–40 minutes.

    Peel the garlic cloves. Mix crème fraîche with lemon juice, salt, pepper, crushed garlic and herbs.

  4. 4.

    Unwrap the foil slightly, slit the tops of the potatoes, peel off some skin, spoon the herb cream on top and sprinkle with crushed red pepper.
