Oven Potatoes with Onions

Ingredients
- 6 small red onions
- 6 Garlic cloves
- 1 kg firm potatoes
- 50 ml olive oil
- Salt
- pepper (ground)
- a splash lemon juice
- a pinch caraway seeds
- coarse Sea salt

Preheat the oven to 200°C with top and bottom heat.

Peel the onions and cut them into wedges. Peel the garlic and slice it thinly. Wash the potatoes thoroughly, remove any damaged parts, and cut them into about 1/2 cm thick slices. In a large bowl combine the potato slices with the onions and garlic. Add the olive oil, salt, pepper, lemon juice, and caraway seeds; mix well.

Line two baking trays with parchment paper and spread the potato mixture evenly on each tray. Bake in the oven for about 40 minutes, swapping the trays 2–3 times to ensure even crisping from all sides. Use a fork to check that the potatoes are cooked through.

Sprinkle coarse sea salt over the finished dish before serving.
