Ingredients

  • 4 tbsp olive oil
  • 4 sprigs thyme
  • Salt
  • Pepper (freshly ground)
  • 1 kg small early potatoes

Instructions

    Preheat the oven to 200°C fan.

    Brush a baking tray with 2 tbsp oil. Distribute the thyme on it and sprinkle with salt and pepper. Wash, dry, and halve the potatoes lengthwise. Place them cut side down on the tray, season, and drizzle with the remaining oil. Bake in the oven for 20-25 minutes until golden brown.
