Ingredients

  • 800 g mostly waxy potatoes
  • 2 red bell peppers
  • 2 red onions
  • 4 Garlic cloves
  • 4 tbsp olive oil
  • Salt
  • pepper (ground)
  • 4 sprigs thyme

Instructions

    Preheat the oven to 180°C fan. Peel and cut the potatoes into wedges. Wash, halve, core, remove white membranes from the bell peppers and slice them lengthwise. Peel the onions and garlic; cut the onions into wedges.

    Combine the potatoes with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for about 15 minutes. Add the peppers, onions, garlic, and thyme to the potatoes, stir, and continue roasting for another 20-25 minutes until tender. Season again with salt and pepper before serving.
