Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 1 tsp Honey
  • 500 g gluten-free flour (for bread or rolls)
  • 2 tbsp ground flaxseeds
  • Salt
  • 350 ml lukewarm water
  • 20 ml olive oil
  • 1 tbsp poppy seeds
  • 1 tbsp Sunflower seeds
  • 1 tbsp Sesame seeds

Instructions

    Stir yeast and honey in lukewarm water until dissolved.

    Add flour, flaxseeds, and salt to a bowl, make a well in the center. Pour in the dissolved yeast and knead with hand mixer hooks. Gradually fold in lukewarm water and olive oil. Knead for at least 5 minutes.

    With wet hands form small mounds on a baking sheet lined with parchment paper and dust them lightly with flour.

    Sprinkle with poppy seeds, sunflower seeds, and sesame seeds as desired. Cover and let rise in a warm place for about 1 hour until doubled in size.

    Steam bake in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for about 20 minutes.
