Ingredients
- 800 g mostly waxy potatoes
- 1 bunch parsley
- 2 Garlic cloves
- 200 g butter
- 2 tbsp olive oil
- Salt
- Pepper
- 2 tbsp chili powder (or paprika)

Peel, wash, pat dry the potatoes and cut them lengthwise in half. Use a melon baller to punch a hole in the center of each half. Wash parsley, finely chop it and mix with softened butter, salt, pepper, and pressed garlic.

Brush an oven-safe dish with olive oil and arrange the potato halves side by side. Spoon the herb-butter mixture into the center of each potato. Sprinkle chili powder from a small sieve over the potatoes. Bake in the oven at 180°C for 35 minutes.
