Ingredients
- 12 large, waxy potatoes
- 400 g quark (or 200 g butter for herb butter)
- 0.5 bunch Parsley
- 0.5 bunch Basil
- 1 tbsp capers
- 1 dried tomato (finely chopped)
- 50 g sour cream (or 50 ml thick milk)
- 50 g whipping cream (omit if using herb butter)
- sea salt (ground)
- Pepper

Wash potatoes thoroughly and drain. Line a baking sheet with foil, sprinkle generously with sea salt, arrange potatoes on top, and sprinkle again with sea salt. Bake at 220°C (425°F) for 40 minutes to 1 hour.

For the quark dip, wash and dry herbs, finely chop them with capers, mix with tomato cubes, salt, pepper, quark, sour cream, and cream; taste. If using herb butter, gently warm butter until spreadable but not melted, whisk in thick milk, fold in herb mixture, season.

Remove finished potatoes from oven, lightly dust with salt, and serve with quark or herb butter.
