Oven-Baked Halibut with Mediterranean Vegetables

Ingredients

  • 1 halibut (ready-to-cook, about 600 g)
  • 1 jar organic basil pesto (from the fridge)
  • 4 tbsp green olives (sliced into rings)
  • 2 Zucchini
  • dried tomatoes in oil
  • olive oil (cold-pressed)
  • 150 ml white wine
  • 100 ml fish stock
  • 2 tbsp chopped parsley
  • Salt
  • freshly ground pepper

Instructions

    Preheat the oven to 200°C.

    Wash and dice the zucchini. Wash the halibut and pat dry. Season with salt and pepper.

    Mix white wine, fish stock, and 3 tbsp olive oil. Place the halibut in a baking dish and brush with 2-3 tbsp pesto, then pour the wine mixture over it. Arrange the zucchini cubes around the fish. Sprinkle the olive rings on top and add 5-6 drained dried tomatoes.

    Bake in the hot oven for 25 minutes. Garnish with parsley and serve immediately.
