Ingredients
- 1 halibut (ready-to-cook, about 600 g)
- 1 jar organic basil pesto (from the fridge)
- 4 tbsp green olives (sliced into rings)
- 2 Zucchini
- dried tomatoes in oil
- olive oil (cold-pressed)
- 150 ml white wine
- 100 ml fish stock
- 2 tbsp chopped parsley
- Salt
- freshly ground pepper

Preheat the oven to 200°C.

Wash and dice the zucchini. Wash the halibut and pat dry. Season with salt and pepper.

Mix white wine, fish stock, and 3 tbsp olive oil. Place the halibut in a baking dish and brush with 2-3 tbsp pesto, then pour the wine mixture over it. Arrange the zucchini cubes around the fish. Sprinkle the olive rings on top and add 5-6 drained dried tomatoes.

Bake in the hot oven for 25 minutes. Garnish with parsley and serve immediately.
