Halibut Roulades with Tomatoes

Ingredients
- 600 g halibut (pre‑cooked)
- 500 g cocktail tomatoes
- 1 bundle basil
- 1 clove garlic
- 400 g fresh ricotta
- 1 tsp thyme (chopped)
- 1 tsp oregano leaf (chopped)
- Sea salt
- Lemon juice
- pepper (ground)
- 4 tbsp olive oil
Instructions

Wash the halibut, pat dry and cut into strips about 3 cm wide. Wash the tomatoes and remove stems as desired. Wash the basil, shake dry, pluck leaves and chop. Peel the garlic clove and finely chop.

Drain the ricotta well or squeeze with a kitchen towel. Mix with herbs and garlic, season with salt, lemon juice and pepper. Spread some filling on each fish strip and roll up. Alternate rolling with tomatoes onto wooden skewers, season with salt and pepper, drizzle olive oil. Grill over medium heat, turning several times for 5–10 minutes.
