Cold Cucumber Soup

Ingredients

  • 1 cucumber
  • 1 bunch chives
  • 1 tbsp Rapeseed Oil
  • 2 tsp sugar
  • 1 small white onion
  • 500 g yogurt (1.5% fat)
  • 100 ml sour cream
  • Salt
  • black pepper (freshly ground)

Instructions

    Peel, halve, deseed, and finely grate the cucumber. Peel and finely chop the onion. Heat the oil and sauté the onion until golden yellow. Add the cucumber slices and briefly cook with them. Sprinkle sugar over the mixture and let it caramelize slightly. Allow to cool.

    Stir the cucumber-onion mixture into the yogurt and blend until smooth, then fold in the sour cream. Season well with salt and pepper. Chill for a few hours. Wash, dry, and finely chop the chives. Distribute the chilled soup into bowls and sprinkle with chopped chives.
