The cold cucumber soup with buttermilk and avocado from Spoonsparrow is a refreshing summer starter.
Ingredients
- 1 Avocado
- 1 salad cucumber
- 2 tbsp peanut kernels
- 1 tsp Honey
- 1 tbsp lime juice
- 5 ice cubes
- 600 ml buttermilk
- Salt
- Cayenne pepper
- paprika powder

Peel the avocado, halve it, remove the pit and cut into pieces. Peel the cucumber, split lengthwise and scoop out the seeds. Cut the halves into chunks. Rinse the coriander, shake dry and pluck the leaves. Set some aside for garnish, then blend the remaining coriander with the avocado, cucumber, peanuts, honey, lime juice, ice cubes and a splash of buttermilk until smooth. Gradually add more buttermilk to reach the desired consistency. Season with salt and cayenne pepper.
