Cinnamon couscous with almonds and figs: The fruit sugars in this low‑calorie side dish give us energy and endurance.
Ingredients
- 20 g chopped almond kernels (1 tbsp)
- 40 g dried figs (4 dried figs)
- 2 tsp Olive oil
- 1 stick cinnamon
- 2 cardamom pods
- 1 tsp turmeric
- 125 ml Mediterranean vegetable broth
- 80 g couscous
- Salt
Instructions

Roast almonds in a dry pan with frequent stirring. Set aside and wipe the pan with paper towels.

Dice the figs into small cubes.

Heat olive oil in the pan. Briefly sauté the cinnamon stick and cardamom pods.

Sprinkle turmeric, immediately add broth and bring to a boil.

Stir in fig cubes and couscous. Bring to a second boil, remove from heat, cover, and let stand for 7 minutes.

Fluff the couscous with a fork. If desired, leave the spices in; otherwise remove cardamom pods and cinnamon stick. Fold in almonds, season with salt, and serve.
