Oriental Pralinen

Ingredients
- 1 EL sesame
- 150 g dried figs
- 75 g dried apricots
- 75 g dried dates
- 50 g candied orange peel
- 50 g ground hazelnuts
- 0.5 TL Ras el-Hanout
- 20 g honey
- 1 EL rose water
- 400 g dark couverture chocolate
- edible silver glitter

Toast the sesame in a dry pan until fragrant, then let cool. Pass the figs, apricots and dates through a fine mesh of a meat grinder. Finely chop the orange peel and combine with the dried fruit and sesame in a bowl. Add hazelnuts, Ras el-Hanout, honey and rose water, then knead everything together. Form small balls and place on parchment paper. Let dry at room temperature for at least 5 hours.

Coarsely chop the couverture chocolate and melt about two-thirds of it over a hot water bath, ensuring it does not exceed 50 °C. Remove from heat and set aside one-third of the liquid chocolate. Stir in the remaining chopped chocolate in portions until melted; the mixture should reach around 28 °C. Then fold in the remaining liquid chocolate by spoonfuls, aiming for about 32 °C. Dip the balls into the chocolate, place back on parchment paper, and dust with a little silver glitter. Optionally draw light streaks over them to set.
