Ingredients

  • 600 g Carrots
  • 2 Spring Onions
  • 1 handful parsley
  • 1 lemon
  • 4 tbsp olive oil
  • 2 tbsp argan oil
  • 1 tbsp agave syrup
  • Salt
  • Pepper
  • a pinch Pul Biber
  • 2 tbsp raisins
  • 40 g almond kernels

Instructions

    Peel and finely grate the carrots. Wash, trim, and slice the spring onions into thin rings. Wash the parsley, shake dry, and roughly chop. Squeeze the lemon to obtain juice. Mix the lemon juice with olive oil, argan oil, agave syrup, salt, pepper, and Pul Biber. Add this dressing to the carrots, then fold in the spring onions and parsley, mixing well. Let the mixture rest for at least 30 minutes.

    Coarsely chop the almonds and toast them in a dry pan until fragrant. Remove and let cool.

    Taste the salad again, divide into four bowls, and sprinkle with almonds.
