Couscous Salad with Beans

The couscous salad with beans is a great meal‑prep idea and works well as lunch or as a side for grilling.

Ingredients

  • 300 g Couscous
  • Salt
  • 480 g white beans (canned; drained weight)
  • 1 cucumber
  • 1 green bell pepper
  • 150 g cherry tomatoes
  • 50 g sun‑dried tomatoes in oil
  • 0.5 bunch Parsley
  • 2 Spring Onions
  • 1 tbsp Lemon Juice
  • Pepper

Instructions

    Cook couscous according to package instructions with boiling salted water.

    Meanwhile, drain the beans in a sieve, rinse them cold and let them drain. Peel, wash and dice the cucumber and bell pepper. Wash and halve the cherry tomatoes. Drain the sun‑dried tomatoes in a sieve, catching 2 tbsp of oil. Roughly chop the sun‑dried tomatoes. Wash the parsley, shake dry and chop the leaves. Trim, wash and slice the spring onions into rings.

    Combine all prepared ingredients in a large bowl and season the couscous salad with lemon juice, salt and pepper.
