Cucumber Salad with Spring Onions

Forget the boring: this cucumber salad with spring onions tastes spicy-aromatic and almost always pairs well!

Ingredients

  • 1 cucumber
  • Salt
  • olive oil (50g green and black olives, pitted)
  • 2 Spring Onions
  • 1 pickled mild chili pepper (from the jar)
  • 1 tbsp chopped dill sprigs
  • 100g yogurt
  • 1 tbsp Lemon Juice
  • Pepper (freshly ground)
  • 0.5 tsp dried thyme
  • 1 tbsp Olive Oil

Instructions

    Wash the cucumber, cut it lengthwise in half, remove seeds and dice finely. Toss with 1 tsp salt and let sit in a sieve for about 10 minutes to draw out water. Chop the olives. Trim and wash the spring onions, slice both green and white parts into thin rings. Drain the chili pepper and cut into fine strips.

    Whisk yogurt with lemon juice, salt, pepper, thyme, and olive oil. Fold in the drained cucumber cubes, olives, spring onions, chili, and dill. Season with salt and pepper to taste.
