Orange Thyme Gel
Orange gel with thyme and vanilla seed: Thanks to oranges, the bread spread contains relatively much vitamin C.
Ingredients
- 2 kg juicy oranges
- 1 Vanilla bean
- 500 g pectin sugar (2:1)
- 5 sprigs thyme
Instructions

Rinse 3 jars (400 ml each) with boiling water and let dry upside down on a clean kitchen towel.

Halve the oranges, squeeze out juice and measure 1200 ml.

Strain the measured juice through a fine sieve into a pot.

Split vanilla bean lengthwise, scrape seeds with knife back and stir into orange juice with pectin sugar.

Wash thyme, shake off water and add to pot with vanilla. Bring to boil and simmer over high heat while stirring constantly for 5-7 minutes until foamy; skim foam.

Test setting by placing a few drops on a plate; if it firms after a few seconds it can be poured. If not, cook another 1-2 minutes and retest.

Remove vanilla bean and thyme. Ladle hot liquid into prepared jars with a spoon. Seal immediately, place upside down on a damp kitchen towel, then stand upright.
