Ingredients

  • 4 untreated oranges (for 250 ml juice)
  • 1 lemon (juice)
  • 50 g sugar
  • 1 Egg white
  • Campari
  • 1 blood orange (sliced for garnish)

Instructions

    Wash the oranges with hot water and grate the peel of two pieces, then squeeze the juice from all oranges.

    Bring sugar, orange zest, and 75 ml water to a boil in a pot while stirring; then let it simmer off the heat for 5 minutes. Cool and strain through a sieve. Beat the egg white until half stiff. Add the orange and lemon juice to the syrup and stir, then fold in the beaten egg white. Pour the mixture into a shallow metal bowl and freeze for about 4 hours, stirring occasionally. (Alternatively finish in an ice cream maker.)

    To serve, scoop balls, fill glasses, and drizzle with Campari as desired. Garnish with blood orange slices and serve.
