Airy Chocolate Dessert

Ingredients
- soft butter (for the molds)
- sugar (for the molds)
- 50 ml milk
- 1 tsp dark cocoa powder
- 1 piece untreated orange zest
- 4 tbsp sugar
- 100 g dark chocolate (or couverture)
- 3 eggs
- Salt
- 1 tbsp flour
- powdered sugar (for dusting)
Instructions

Preheat the oven to 180°C (356°F) with top and bottom heat. Grease the molds with butter and evenly sprinkle with sugar.

Bring the milk, cocoa powder, orange zest, and 2 tbsp sugar to a boil in a small pot. Meanwhile, chop the chocolate.

Remove the milk from the heat and discard the orange zest. Add the chocolate and let it melt. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form, gradually adding the remaining sugar. Stir the yolks and flour into the liquid chocolate. Fold in the whipped egg whites and pour the chocolate mixture into the prepared molds.

Place these in a large oven-safe dish (e.g., gratin pan or deep baking sheet). Pour about 2 to 3 cm of hot water over them and bake on the lower rack for 25-30 minutes.
