Ingredients
- 500 g salmon fillet (very fresh and skinless)
- 1 untreated orange
- 2 EL olive oil
- 1 TL coarse sea salt
- pepper (from the mill)
Instructions

Rinse the salmon, pat dry, and cut into approximately 12 slices about 4-5 mm thick.

Wash the orange hot, pat dry. Grate the zest and squeeze the juice. Mix the juice with olive oil and drizzle half of the mixture in a shallow dish. Lay the salmon slices on top and pour the remaining marinade over them. Cover and refrigerate for about 20 minutes.

Lightly crush the sea salt with the orange zest in a mortar.

Remove the salmon from the marinate and arrange on plates. Sprinkle with orange salt, lightly pepper, and serve.

Garnish with herbs as desired.
