Ingredients

  • 3 spring onions
  • 30 g ginger
  • 8 untreated limes
  • 1 handful coriander leaves
  • 200 ml olive oil
  • 0.1 g ground saffron (1 sachet)
  • 1 tsp Piment d’Espelette for sprinkling (mild chili powder)
  • Salt
  • 4 pre-cooked dorade fillets (about 500g each)

Instructions

    Clean, wash and cut the spring onions into small rolls. Peel the ginger, first slice it, then cut into sticks. Wash two limes, halve them and thinly slice. Juice the remaining limes. Wash the coriander, shake dry and chop.

    Mix lime juice and olive oil with ginger, saffron, coriander and chili powder. Season the mixture with salt and marinate the fish for at least half an hour, turning occasionally.

    Remove the fish from the marinade and make several diagonal slits. Insert lime slices into these cuts. Preheat a grill.

    Place the fish on aluminum grill trays and cook on the grill for about 20 minutes. Turn once halfway through and drizzle remaining marinade over them.
