Baked Sea Bass in Salt Crust

A fresh sea bass dish wrapped in a salt crust, perfect for a gourmet meal from Spoonsparrow.
Ingredients
- 4 pre-cooked whole sea bass (about 300 g each)
- 4 cloves garlic
- 2 lemons
- Salt
- freshly ground pepper
- 2 kg coarse sea salt
- 4 egg whites

Preheat the oven to 250°C (220°C fan).

Wash and pat dry the fish inside and out. Peel the garlic and slice thinly. Wash the lemons and slice them as well. Fill the fish cavities with lemon slices and garlic, seasoning with salt and pepper. Mix the sea salt with the egg whites. Line a baking tray with parchment paper and spread half of the salt mixture in small piles on it. Place the fish on top and cover with the remaining salt. Bake in the preheated oven for about 25 minutes. Serve with the salt crust intact.
