Fried Giant Shrimp in Noodles

Ingredients

  • 2 tbsp Soy sauce
  • 150 g rice noodles
  • 12 giant shrimp (pre‑deveined and peeled except for the tail segment)
  • Salt
  • pepper (ground)
  • 1 Egg white
  • vegetable oil (for frying)

Instructions

    Bring about 1 l water with the soy sauce to a boil. Add the rice noodles, remove from heat and let soak for about 5 minutes. Drain the noodles through a sieve and let them drip dry. Rinse the shrimp, pat dry and season with salt and pepper. Coat each shrimp in the beaten egg white, drain and tightly wrap with the noodles. Place on a plate and allow to air‑dry for about 15 minutes.

    Meanwhile heat oil in a pot or deep fryer to about 170°C (hot enough when bubbles rise from a spoon handle held in the fat).

    Slide the shrimp one by one into the hot oil (beware of splashes) and fry portions for 2–3 minutes until golden yellow. Drain on paper towels and serve immediately.

    Serve with chili sauce if desired.
