Orange-Pumpkin Preserve

The orange-pumpkin preserve from Spoonsparrow is a great gift idea, a bring-along snack or simply for personal indulgence!

Ingredients

  • 1 kg Hokkaido pumpkin
  • 6 organic oranges
  • 0.5 tsp ground cinnamon
  • 100 g honey
  • 0.5 tsp agar-agar

Instructions

    Wash the pumpkin, halve it, remove seeds and cut flesh into cubes. Rinse oranges hot, peel two oranges, slice peel into fine strips and juice all oranges.

    Add juice with 100 ml water and pumpkin cubes to a pot and bring to boil. Cook pumpkin cubes over medium heat until soft, then strain through a fine mesh sieve into a new pot, squeezing out the flesh.

    Add orange peels, cinnamon and honey, bring to a boil, add agar-agar and simmer for about 2 minutes more. Let cool slightly and fill prepared jars, seal tightly and leave upside down for 10 minutes. Turn upright and store in a cool, dark place.
