Red Berry Pudding

Ingredients
- 350 g red currants
- 250 g raspberries
- 0.5 l cherry juice
- 200 g sugar
- 400 g pitted sour cherries (chopped)
- 60 g cornstarch
- 40 ml cherry liqueur (optional)
- 400 ml vanilla sauce
- 50 g white chocolate shavings
- cherry juice (for garnish)

Wash the currants and raspberries, pat dry and strip the stems from the currants. Add them with cherry juice to a pot, simmer for 5 minutes and strain through a sieve, catching the juice. Bring the juice with sugar to a boil and add the chopped sour cherries. Whisk the cornstarch with 100 ml water until smooth, stir into the pudding and bring to a boil once more, then stir in cherry liqueur. Pour about three‑quarters of the pudding into small glasses and chill in the refrigerator until set.

Serve garnished with chocolate shavings, cherries and 1–2 tablespoons of vanilla sauce each. Offer the remaining sauce on the side.
